Soup Dumplings with Herbs

THIS SIMPLE DUMPLING RECIPE QUICKLY ADDS FLAVOR AND COLOR TO SOUPS. For general use, parsley is a good herb choice. For seafood soups, I prefer fresh dill. Be sure to use whole milk and all-purpose flour (not cake flour). Sift the flour to eliminate any lumps. Go here for another easy dumpling recipe.

There's no need to make the dumplings into balls (unless you want to). It's easiest to drop little globs of dough into the soup with a fork. Keep in mind that the dumplings will swell to 3 to 4 times their original size when cooked.

Preparation time 5 minutes. Makes enough dumplings for one pot of soup that serves 3-4.




Combine ingredients

Combine thoroughly in small bowl until dough forms, then cover with plastic wrap and set aside for 10-15 minutes
  • 1/2 cup (4 oz) all-purpose flour, sifted
  • 1 egg, beaten
  • 3 tablespoons milk
  • 1/4 tsp salt
  • 1 tablespoon fresh parsley or dill, chopped fine


Add dumplings to soup

Use a fork to drop small chunks of dough into soup and simmer, covered, 10-15 minutes.
