Easy Soup DumplingsIF YOUR SOUP BEGS FOR DUMPLINGS, HERE'S A SIMPLE RECIPE. The dumplings are light, flavorful, and have a wonderful texture. Be sure to use whole milk and all-purpose flour (not cake flour). Be sure to sift the flour. Go here for my dumplings-with-herbs recipe. There's no need to make the dumplings into balls (unless you want to). It's easiest to drop little globs of dough into the soup with the fork you use for mixing. Keep in mind that the dumplings will swell to 3 to 4 times their original size when cooked. Preparation time 5 minutes. Makes enough dumplings for one pot of soup that serves 3-4.
