Easy Soup Dumplings

IF YOUR SOUP BEGS FOR DUMPLINGS, HERE'S A SIMPLE RECIPE. The dumplings are light, flavorful, and have a wonderful texture. Be sure to use whole milk and all-purpose flour (not cake flour). Be sure to sift the flour. Go here for my dumplings-with-herbs recipe.

There's no need to make the dumplings into balls (unless you want to). It's easiest to drop little globs of dough into the soup with the fork you use for mixing. Keep in mind that the dumplings will swell to 3 to 4 times their original size when cooked.

Preparation time 5 minutes. Makes enough dumplings for one pot of soup that serves 3-4.

Heat liquid ingredients

Put into bowl and gently heat in microwave until butter melts
  • 1/3 cup whole milk
  • 1 tablespoon unsalted butter

Mix dry ingredients

Combine in separate bowl
  • 2/3 cups all-purpose flour, sifted
  • 1 tsp baking powder
  • 1/4 tsp salt

Make the dumplings

Pour liquid mixture into dry ingredients and mix briefly with a fork until dough forms. Then use the fork to drop small chunks of dough into soup and simmer, covered, 12-15 minutes.
