Shallot Sauce for Seafood and Potatoes

THIS SAUCE ADDS WONDERFUL FLAVOR TO MILD SEAFOOD such as scallops or cod. If you serve seafood with boiled potatoes or a vegetable like green beans, use the sauce to lightly dress the entire plate.

I suggest shallots because they won't overwhelm delicate seafood. You can substitute mild white onions, especially if the sauce is for dressing potatoes and vegetables.

 Total time less than 15 minutes. Dresses 2-3 servings.

Gorgonzola cheese also makes an excellent sauce (for potatoes, not seafood). Go here for an easy recipe.

Over medium-high heat, melt butter; then add shallots and cook until tender (2-3 minutes)
  • 1 tablespoon unsalted butter
  • 1 shallot, chopped very fine

Add and simmer 6-8 minutes or until liquid is reduced to about 1/3 cup
  • 1 cup (8 oz) dry white wine
  • grated zest from 1/2 lemon

Remove from heat and stir in
  • 2 tablespoons unsalted butter
  • juice from 1/2 lemon
  • 1 tablespoon capers, some minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and fresh ground pepper to taste
