Spanish Tuna Salad with Roasted Peppers

TRY THIS FOR A QUICK SPANISH-STYLE SALAD. It goes together in just 10-15 minutes. Serves 2-3; double ingredients to serve 4-6. Serve with fresh bread.

  • Prepared roasted red peppers are available in supermarkets.

SHOPPING LIST:

Jerry's Recipes
  • Tuna in olive oil
  • Capers
  • Mayonnaise
  • Lettuce
  • Roasted red peppers
  • Black olives
  • Sherry vinegar
  • Paprika
  • Fresh flat-leaf parsley

Combine ingredients

Mix in small bowl (tuna should remain flaky)
  • 1 6-oz can tuna (drained)
  • 1 tablespoon capers, rinsed
  • 2 tablespoons mayonnaise

Arrange on individual serving plates

  Put torn lettuce leaves on plates; then put some roasted red peppers in center of leaves surrounded by sliced black olives.

  Put a large spoonful of tuna mixture on top of the peppers.

Drizzle over salad
  • extra-virgin olive oil
  • sherry vinegar

Sprinkle over the salad
  • paprika

Garnish with
  • chopped fresh parsley
