Garbanzo Bean Salad

MAKE THIS AS EITHER A SIDE DISH OR A LIGHT MEAL. Like white bean salad, this one goes together quickly.

Cannellini beans (white kidney beans) can be substituted for garbanzo beans.

Prep time about 15 minutes. Makes 2-3 servings.

SHOPPING LIST:

    • Garbanzo beans (chick peas)
    • Tomatoes
    • Scallions
    • Black olives
    • Fresh parsley (or mint leaves)
    • Capers
    • Wine vinegar
    • Eggs

Mix the salad

Combine in medium bowl
  • 1 14-oz can garbanzo beans, drained and rinsed
  • 1 tomato, chopped
  • 2 scallions (both white and some green parts), chopped (or red onion)
  • 6-10 black olives, pitted and halved
  • 1 tablespoon fresh parsley (or mint), chopped
  • 2 tsp capers, drained

Mix separately in a small cup or bowl,
then combine with the bean mixture
  • 2 tablespoons extra-virgin olive oil
  • 1-1/2 tablespoons red or white wine vinegar
  • salt and pepper to taste

To serve

  • Garnish servings with hard-cooked eggs, quartered
