Garbanzo Bean Salad
MAKE THIS AS EITHER A SIDE DISH OR A LIGHT MEAL. Like white bean salad, this one goes together quickly.
Cannellini beans (white kidney beans) can be substituted for garbanzo beans.
Prep time about 15 minutes. Makes 2-3 servings.
SHOPPING LIST:

- Garbanzo beans (chick peas)
- Tomatoes
- Scallions
- Black olives
- Fresh parsley (or mint leaves)
- Capers
- Wine vinegar
- Eggs

Mix the salad
|

Combine in medium bowl
|
- 1 14-oz can garbanzo beans, drained and rinsed
- 1 tomato, chopped
- 2 scallions (both white and some green parts), chopped (or red onion)
- 6-10 black olives, pitted and halved
- 1 tablespoon fresh parsley (or mint), chopped
- 2 tsp capers, drained

Mix separately in a small cup or bowl, then combine with the bean mixture
|
- 2 tablespoons extra-virgin olive oil
- 1-1/2 tablespoons red or white wine vinegar
- salt and pepper to taste

To serve
|
|
|
|
- Garnish servings with hard-cooked eggs, quartered
|
|
|
|
