White Bean Salad

TRY THIS FOR A QUICK AND SATISFYING ITALIAN-STYLE SALAD. It goes together in about 15 minutes, mostly with standard pantry and refrigerator items. I especially like it with the optional tuna (select tuna packed in olive oil such as Genova® brand). Use garbanzo beans if cannellini beans aren't available; or use some of each.

Serves 3-4 as a side-salad.

SHOPPING LIST:

  • Dijon mustard
  • White wine vinegar or lemon juice
  • Cannellini beans (white kidney beans)
  • Celery
  • Red onion or scallions
  • Fresh flat-leaf parsley
  • (see options below)

Combine ingredients

Whisk together in medium bowl
  • 2 tablespoons extra-virgin olive oil
  • about 1 tsp Dijon mustard
  • 1 tablespoon white wine vinegar or lemon juice

Stir in, then refrigerate
  • 1 14-oz can cannellini beans, drained and rinsed
  • 1 celery rib, finely diced
  • 2 tablespoons red onion or 2 scallions, chopped fine
  • 1-2 tablespoons parsley, chopped
  • salt and pepper to taste
  • Optional: 1 7-oz can tuna in olive oil, drained
  • Optional: 1 dill pickle, chopped
    (or 2-3 tablespoons pickle relish)
  • Optional: 1 hard-cooked egg, peeled and chopped
  • Optional: 1 tablespoon capers, rinsed

  Options and ideas

  • Add 1 clove garlic, minced
  • Garnish with fresh chives or fresh basil leaves (torn)
  • Top with cherry tomatoes
  • Serve on bed of lettuce or other leafy greens.
