Ladies Aid Potato Salad

THIS GETS MIGHTY CLOSE TO THE CHURCH SUPPER POTATO SALAD FROM MY CHILDHOOD. Salads varied slightly from homemaker to homemaker (that was what Moms were called back then). Daring homemakers occasionally added sliced radishes, olives, or chopped celery (sometimes even garlic!). But every potato salad was based on potatoes, mayonnaise, onions, eggs, and prepared yellow mustard.

I recall the main difference among salads was the quantity and consistency of dressings. They varied from super-creamy to ultra-dry. You can create the outcome you prefer by using two bowls and mixing the ingredients in the order described below.

KeyUse fresh dill if at all possible. If using dried dill, leave the salad in the refrigerator overnight so that the dill flavor blends in.

Put together in 15-20 minutes (plus potato cooking).


SHOPPING LIST:

  • Prepared yellow mustard
  • Garlic
  • Fresh dill
  • Paprika
  • Flat-leaf parsley
  • Red potatoes
  • Red onion
  • Eggs
  • Mayonnaise



Prepare potatoes, onion and eggs

Cook the potatoes, cool, peel (if desired), then cut into bite-size pieces and put into large bowl

  • 5-6 medium potatoes (about 2 pounds)

Add
  • 1/2 medium red onion, chopped fine
  • 2 hard-boiled eggs, chopped


Make the dressing

Combine in a small bowl

  • 3/4 cup (6 oz) mayonnaise
  • 2 tablespoons prepared yellow mustard
  • 2 tablespoons fresh dill, chopped (or 1-1/2 tsp dried dillweed)
  • 1/8 tsp paprika
  • salt & ground black pepper to taste
  • Optional: 1-2 cloves garlic, minced (see garlic notes)


    Finish the salad

  • Put about half the dressing into the large bowl (the one with the potato mixture) and gently mix with a spatula until everything is evenly coated.
  • Add more dressing as needed to reach the desired combination of dressing and potatoes.


    Serving suggestion

  • Sprinkle lightly with paprika
  • Sprinkle with flat-leaf parsley, chopped
  • Serve salad on a bed of lettuce
