Dilled Apple Potato Salad

A RATHER TRADITIONAL POTATO SALAD until you add apples and optional sardines. Use new red potatoes if possible (about an inch in diameter). Otherwise, use the freshest, smallest red potatoes you can find.

KeyMustard seeds. Mustard seeds add pungency to the recipe. For even fuller flavor, first toast the seeds lightly in a dry skillet.

KeyDill. Use fresh dill if possible. If using dried dill, leave the salad in the refrigerator overnight so that the dill flavor blends in nicely.

KeyApples. Any apples serve the purpose, but I prefer sweeter rather than tart varieties. Braeburn and Pink Lady are just two of many good choices. Core the apple, then cut into small slices or pieces about 1/4" thick. Peeling is optional.

Takes 15-20 minutes (plus potato cooking).

  • New red potatoes
  • Lemon
  • Scallions
  • Dijon mustard
  • Mustard seeds

Prepare the potatoes

Cover with water in a saucepan, bring to low boil and cook until just tender; then drain and set aside until cool
  • 1 pound small new red potatoes, unpeeled (or 3-4 medium red potatoes)
  • 1/2 tsp salt



Prepare the salad

Whisk together in small bowl
  • 1/4 cup (2 oz) olive oil
  • 1/2 tsp lemon peel, grated
  • juice from 1/2 lemon
  • 2 scallions, sliced (white and some lighter green parts)
  • 1 tsp Dijon mustard
  • 1 tsp mustard seeds
  • 1-1/2 tsp fresh dill, chopped (or 1/2 tsp dried dillweed)
  • fresh ground black pepper to taste

Into a large bowl, cut cooked unpeeled potatoes in half or into slices no more than 1/4" thick.

   Serving suggestion:

  • Serve salad on a bed of leafy lettuce on individual plates.
  • Accompany with a few brisling sardines in olive oil (drain first)
