Swedish Split Potatoes

www.cybershingle.comEAT A COUPLE FOR A LIGHT MEAL OR ONE AS A SIDE DISH. These are baked potatoes, but nothing like the usual—certainly not in appearance. Simple and delicious. [If used as a side dish, a good partner would be a grilled salmon fillet].

Potatoes. Russets or other medium-starch oval-shaped potatoes are ideal. Low-starch red or white potatoes are OK but expect a rather longer baking time. Scrub the potatoes only; leave peels on. Then cut the potatoes into thin wedge-shape slices, almost but not entirely through. This is the key > cut just enough so that one edge of the potato holds the slices together. Then use fingers to 'fan' the split potatoes. The photo says it best.

Preparation time about 10 minutes. Total time about an hour. Serves 3-4.

Do the dish

Prepare potatoes as above
  • 5-7 potatoes

Place the potatoes, split side up, in a buttered oven-proof dish, then sprinkle with
  • 1/2 tsp salt
  • 2 tablespoons butter

Cover loosely with foil and put dish in pre-heated oven at 450º F. for about 20 minutes;
sprinkle potatoes with olive oil once or twice while they're baking.

Remove dish from oven, sprinkle with coatings,
then return to oven and bake another 25 minutes, uncovered
  • 2-3 tablespoons Parmesan cheese, grated
  • 1-2 tablespoons bread crumbs
  • Optional: 1 tablespoon cooked bacon, crumbled

  Serving:

  • Sprinkle with minced fresh dill or chopped chives
  • Drizzle with melted butter
