EAT A COUPLE FOR A LIGHT MEAL OR ONE AS A SIDE DISH. These are baked potatoes, but nothing like the usualcertainly not in appearance. Simple and delicious. [If used as a side dish, a good partner would be a grilled salmon fillet].
Potatoes. Russets or other medium-starch oval-shaped potatoes are ideal. Low-starch red or white potatoes are OK but expect a rather longer baking time. Scrub the potatoes only; leave peels on. Then cut the potatoes into thin wedge-shape slices, almost but not entirely through. This is the key > cut just enough so that one edge of the potato holds the slices together. Then use fingers to 'fan' the split potatoes. The photo says it best.
