Spaghetti with Pine Nut Sauce

Take a vegetarian break with this simple pasta meal. Healthy, colorful, delicious.

 Pine nuts. Use pine nuts directly from the bag but, for more flavor, lightly toast them in an ungreased skillet over medium heat (shake skillet frequently).

Total time 30-45 minutes. Serves 4.

  • Pasta (spaghetti or fettuccine)
  • Onion
  • Pine nuts
  • Garlic
  • Canned crushed tomatoes
  • Fresh flat-leaf parsley
  • Fresh basil
  • Parmesan cheese

Prepare pasta


 
    14 to 16 oz pasta

Cook ALMOST to al dente in at least 4 quarts boiling, salted water
(follow package directions)


Prepare sauce

In sauté pan large enough to combine the cooked pasta with the sauce, fry until onions are softened (3-4 minutes)

  • 3 tablespoons butter
  • 1 medium onion, chopped fine

Stir in and continue cooking until onions are golden but not browned (5-6 minutes)

  • 1/2 to 3/4 cup (4-6 oz) pine nuts (see above)
  • 1-2 cloves garlic, minced or chopped

Stir in and cook gently 5-6 minutes, covered; stir occasionally
  • 8-10 oz canned crushed tomatoes
  • Salt and fresh ground black pepper

Stir in and turn off heat
  • Palmful fresh parsley, chopped
  • Palmful fresh basil, chopped

Drain the cooked pasta, then add it to the sauce in the pan and toss gently to coat the pasta.
If pasta seems dry, stir in a small amount of reserved pasta cooking water.
Transfer to serving bowl if desired.

       To serve:

  • Sprinkle servings with fresh grated Parmesan cheese
