Banana Chicken with Cilantro

WE'RE TALKING CARIBBEAN-STYLE STEW.  Serve over white rice for a complete meal. Or with cooked green beans on the side for more color and nutrition. Because it's extremely forgiving as to quantities and cooking times, 'banana chicken' is perfect for the novice cook. Fresh cilantro is essential. For hot sauce, a good choice is Pickapeppa®. Start with about 1/2 tsp during cooking; put hot sauce on the table for individual servings.

KeyChicken. Prepare one breast per person. Trim fat, then flatten breasts to half-inch thick by pounding with a meat tenderizer or rolling pin (cumin flavor penetrates better). Then cut into bite-size chunks or strips and season with salt and pepper.

Total time 1-2 hours. Serves 4.

Brown the chicken

On stove top, bring large uncovered pan to medium-high heat, then brown chicken pieces—about 5 minutes on each side. When finished, remove chicken and set aside.

Prepare sauce

In same pan, add and cook about 5-8 minutes until onions are lightly browned and translucent. Stir often. Add garlic in last minute.
  • 1 medium onion, chopped
  • 2 firm bananas, peeled and quartered
    (or 1-2 ripe plantain)
  • 3/4 teaspoon cumin, ground
  • 1 garlic clove, chopped or minced

Add and cook about 5 minutes, uncovered
  • 1 28-oz can tomatoes chopped, with juice
  • 3/4 cup (6 oz) chicken stock
  • small handful fresh cilantro, chopped
  • 1/4 teaspoon hot sauce (or to taste)
  • Salt and fresh ground black pepper to taste
  • Optional: 1 tablespoon tomato paste
  • Optional: 5-6 mushrooms, chopped

Add, cover, and simmer 30-45 minutes
  • reserved cooked chicken pieces


Prepare rice

While the sauce is cooking, prepare white rice according to package directions.


     To serve:

  • Serve over prepared long-grain white rice garnished with chopped fresh cilantro leaves
  • Slice a banana or two sprinkled with cinnamon as topping for individual servings.
